- 1). Fill the bottom reservoir of the double boiler with water. Insert the top boiler. Use the boiler basket, not a steam basket. Turn the stove to a medium-simmer, which is between 3 and 4 on the dial of a stove.
- 2). Add a pound of sweet, milk chocolate. Chocolate chips or a Hershey chocolate bar make ideal choices for a rich tasting pudding. Alternatively, you can use semisweet chocolate chips if you don't like your pudding to be too sweet.
- 3). Pour a cup of milk over the chocolate and cover the double boiler. Let it simmer for about 15 minutes.
- 4). Mix the cornstarch and remaining milk in a separate cup. This keeps the cornstarch from clumping when it is added to the milk and chocolate.
- 5). Whisk the melted chocolate and milk, to mix it together. Slowly pour in the cornstarch and milk mixture. Whisk the mixture thoroughly.
- 6). Turn the temperature on the stove to its highest setting. Bring the pudding mixture to a boil and then immediately turn off the stove. Whisk the mixture quickly for two minutes. This results in a thick, velvety textured pudding. Serve it immediately, or let it cool and refrigerate it for later.
