- Tomatoes need a minimum nighttime temperature over 50 degrees F before they will begin to flower and set fruit, but they will stop ripening if it gets too hot. Tomatoes also need rich, well-draining soil, full sun all day, and water only when the soil begins to dry out.
- The University of Florida developed the Solar Set hybrid tomato for hot regions of the southernmost state, so they are also appropriate for south Texas. The 9-oz. tomatoes ripen 70 days after you set out plants. Plants are also resistant to common plant diseases that can occur in hot weather.
- Several types of Roma, or paste, tomato exist. All have thicker skin and less juice than standard slicing tomatoes or cherry tomatoes. Redwood Barn Nursery in California's Central Valley recommends this tomato for hot, dry areas. Plants are compact and very productive.
