- 1). Hold the stalks upside down over a bowl and run your had down over the flowers. Shake the flower stalks until all the flowers are collected in the bowl.
- 2). Use three times more fresh English lavender flowers than you would using dried flowers. Dried lavender has less water in it and the taste is more concentrated.
- 3). Chop the lavender flowers to release the flavor and make the buds more tender. Use a food processor, a spice grinder or a knife.
- 4). Add a few tablespoons of chopped lavender flowers to a salad. Sprinkle a few tablespoons of fresh chopped English lavender on meat and vegetable stir-fries and roast dishes.
- 5). Substitute English lavender in any recipe that calls for rosemary. Rosemary and lavender are related herbs that taste similar.
- 6). Add English lavender to a bag of sugar and seal it tightly for two to three weeks. Once the lavender infuses the sugar with flavor, use the sugar in desserts and baking.
- 7). Chop the fresh English lavender stems in half and place them inside a chicken before roasting. The lavender stems infuse the chicken with flavor during the cooking process. Lavender stems are also suitable for use in other fowl, such as Cornish game hens, duck and turkey.
- 8). Place a few stalks of fresh English lavender on the grill next to meat and vegetables. The smoke will be infused with lavender flavor that will enhance the food's flavor.
