- 1). Combine 1 cup thinly sliced red onions, 3 tbsp. red wine vinegar and 1/8 tsp. salt in a plastic bowl. Cover the bowl with plastic wrap and let the onion marinade for a half hour.
- 2). Cut 30 cherry tomatoes in half and add them to the bowl containing the onion.
- 3). Slice one English cucumber into thin pieces and add it to the bowl. The English cucumber is usually sold wrapped in plastic and has smaller seeds than the average cucumber. You won't need to seed or peel it because it won't have the wax build up of the average cucumber. The size of its seeds is also preferable to the average cucumber as large cucumber seeds have a bitter flavor.
- 4). Wash and cut 1/4 cup fresh basil. Add it to the vegetables in the bowl.
- 5). Stir 2 tbsp. olive oil into the bowl of cherry tomato cucumber salad. Salt and pepper to taste.
