- 1). After baking the chicken legs, keep them in the oven to warm at 150 degrees F with a cover or aluminum foil over it. The food needs to be kept at a minimum of 140 degrees because the chafing dish is intended to keep food warm, not bring it up to a warmer temperature.
- 2). Place hot water into the chafing dish tray. Pour the water into the pan until it reaches about 1 1/2 inches.
- 3). Place the empty food pan on top of the water pan. Place a lid on top, or cover with aluminum foil.
- 4). Pry the lid off the Sterno can and light it with a match or lighter. Each Sterno can will burn about 1 to 1 1/2 hours. Place the can under the water pan to keep the water hot.
- 5). Place the baked chicken legs into the top food tray. Pick each piece out with tongs and place them in the chafing dish. Immediately cover the dish to keep the chicken warm.
