- 1). Rinse the baby lobsters under running water until clean of debris. Set them aside.
- 2). Pour 3 gallons of water in to a large pot. Add 3/4 cup of coarse salt.
- 3). Plunge the herbs or vegetable into the pot. For example, use rosemary, parsley, carrots, corn on the cob, garlic, onions, potatoes or tomatoes.
- 4). Bring the salted water to a rapid boil over high heat. Drop in the baby lobsters, head and claw first, one at a time into the rolling water.
- 5). Pour the white wine into the pot.
- 6). Place the lid on the pot and allow water to return to a boil. Start timing the baby lobsters once the water is boiling. It will take 16 to 19 minutes for 3 lbs. of baby lobsters to cook.
- 7). Ladle the baby lobsters and other ingredients. Drain well before placing on a serving platter.
