Sushi is all about making precise cuts of fish, seaweed, rolls and veggies so it's important to use sharp knives. Japanese sushi knives are a good choice as they are honed on only one side to create a sharp cutting edge. You can also use your everyday knives. Sharpen them with honing steel before using them.
