How to Decorate a Swiss Cake

    Log Cake

    • 1). Cut 3 inches from the end of the cake at an angle and place it against the side of the cake to make it look like a branch from the main log.

    • 2). Spread an even layer of chocolate frosting over the entire cake, including the sides. Smooth the icing with a spatula.

    • 3). Run the tines of a fork along the length of the main cake and down the length of the branch to make the lines for the bark of the log. Draw concentric circles in the frosting covering the two ends of the main cake and the end of the smaller branch for the rings of the log.

    • 4). Roll the green fondant out to 1/8 inch thick.

    • 5). Press the cookie cutter into the fondant to make leaf shapes. Score the outline of veins in the leaves lightly with the tip of a sharp knife.

    • 6). Scatter the fondant leaves over the cake at random to look like leaves fallen from a tree on top of the log.

    • 7). Sprinkle the entire cake with powdered sugar to give it a snow-dusted appearance.

    Sweet and Simple

    • 1). Fill a pastry bag with buttercream frosting. Use a frosting in a contrasting color to the cake and complementary to the filling. For instance, if the cake is chocolate and filling is cream, use a white, vanilla frosting. Opt for a strawberry frosting for topping a yellow cake with strawberry filling.

    • 2). Hold the pastry bag in one hand directly above the top of the cake at one end and the tip against the cake. Gently squeeze the bag with the other hand to push out a small amount of frosting. Pull up the pastry bag slowly as you release pressure to leave behind a star-shaped dollop of frosting.

    • 3). Repeat making dollops of frosting along the top of the cake in a single line.

    • 4). Place a whole strawberry upside down with the stem end in the frosting of each dollop.

    • 5). Dust the entire cake with powdered sugar to finish.
