While professional creperies often feature large and flat griddle-like cook surfaces, the home chef requires specialized cookware to use over a regular stove. To make a batch of paper-thin crepes, you'll want a sizable pan with low sides. To this end, Calphalon offers its "Commercial Nonstick 10-Inch International Griddle and Crepe Pan." The pan's non-stick surface allows health-conscious cooks to prepare foods without using excess butter or oil. Its 10-inch diameter allows you to make a crepe large enough for a full meal; however, the pan is not so large as to become unwieldy. - Made in China, Calphalon's commercial crepe pan is composed of three layers--it has an aluminum core, a hard-anodized exterior and a nonstick cooking surface. The 10-inch pan measures 17 inches in length, including the handle, 10.6 inches wide and 3 inches deep. The pan weighs 3.6 pounds. Calphalon's Commercial Hard-Anodized line was first established in 1998, combining the company's signature hard-anodized construction with the distinctive "Cool V" handle design.
- The pan comes with Calphalon's lifetime warranty, which offers to replace any defective item that does not stand up to normal household use and good maintenance and care. Minor scratching or markings are considered part of normal wear, and do not qualify for replacement. Likewise, the warranty does not extend to any damages due to misuse, improper cleaning, fire or use in a commercial establishment. The pan is oven-safe at temperatures up to 450 degrees Fahrenheit.
- On Amazon.com, the Calphalon C1210P Commercial Nonstick 10-Inch International Griddle/Crepe Pan has received a first-place rating among crepe pans, ranked number four of all griddles and number nine among skillets. According to Amazon.com's product review, the pan's sides slope gently and are sufficiently low for flipping pancakes or sliding out crepes. The pan offers even heat distribution, rapid heat conduction, and an effective non-stick surface. The review also points out that, as with any nonstick-surfaced pan, you should not use metal utensils. Doing so may scratch the pan and void the Calphalon warranty.
- While Calphalon's list price for the Commercial Nonstick Crepe Pan is $85, vendors including Amazon.com offer the item for as low as $29.99, as of September 2010.
