Wild Boar Tenderloin with Roasted Fennel



This recipe for wild boar tenderloin uses the flavors of the Italian roast pork called porchetta: fennel, garlic, salt and lemon.  Porchetta can be a daunting dish even for an experienced chef, but this recipe is super simple and takes very little preparation.  The fresh fennel sweetens when roasted, and the fennel fronds and lemon zest finish the dish with bright flavors.
