- The function of a double boiler is to melt a substance over indirect heat, to prevent it from burning. A double boiler may be used for sauces that are too delicate to place over direct heat, chocolate for baked goods or fondue, or even wax for making candles. Double boilers are effective for foods like chocolate, that must be melted thoroughly to be used in the recipe, but may burn if placed directly over the heat source.
- A double boiler is set up as with a two-pot system, with one pot fitting into the top of the other but not hitting the bottom of the lower pot. The bottom pot is filled with an inch or so of water, and the chocolate or sauce is placed in the top pot. The water in the bottom pot is brought to a simmer, or close to a simmer, and the seal formed from the pot on top creates steam. The food melts or warms gently and evenly from the heat from the steam.
- If you have not been able to obtain a matching double boiler set, you can still use a double boiler in your cooking by making one yourself. All you need is one of your normal kitchen pots or saucepans, and a heat-safe glass or metal mixing bowl. As long as the base of the bowl is larger than the opening of the pot, it will fit on top nicely and do the job. Once you have the two pieces, the assembly works the same as a double boiler set, with boiling water on the bottom and steam-heated food on top.
- Where steam is involved, the potential for burns exists. When you are using a double boiler, especially a homemade one that won't fit securely together, use caution. Use an oven mitt or kitchen towel to hold the bowl securely as you stir the chocolate or sauce, to prevent the bowl from slipping off and exposing your arms to the steam.
