Bresaola with Arugula and Parmesan

This salt-cured, dried beef (it's known as viande des Grisons or Bündnerfleisch elsewhere in Europe) is usually eaten with fresh, peppery arugula, thin shavings of Parmigiano Reggiano cheese, a drizzle of extra-virgin olive oil and a squeeze of fresh lemon juice.
