Ingredients

- 4 tablespoons unsalted butter
- 1 egg, whisked
- 1 cup all-purpose flour

Preparation
*The recipe makes 100 crisps. This amount is perfect for a party of 8 people or more, but you can also halve the recipe to make a smaller batch.
In a food processor, blend the cheese and butter together as much as possible so the texture is smooth. You'll have to stop the food processor a few times to scrape down the sides. Once the mixture becomes too thick for the blade of the processor to handle, scrape the mixture into a large bowl.
Using your hands, mix the egg into the dough until well-combined. Slowly add the flour, kneading until it is completely blended in to the dough.
Split the dough into two balls. Shape and roll the dough into a long, even tube that is approximately ten to eleven inches long and one inch thick.
Wrap the dough in parchment paper and refrigerate for at least two hours.
Preheat the oven to 350 F
Use a knife to slice the tubes of dough into thin crackers, about 1/8 to 1/4 inch thick. Each time you slice the dough, rotate the tube of dough one turn; this will help prevent the crisps from being flat on the bottom side instead of round. However, don't worry about the shape of the crisps too much, they don't have to be perfectly round.
Place the crackers on a baking sheet lined with parchment paper. The crackers can be placed fairly close together, but they will spread slightly.
Bake for twelve minutes. The crisps can be eaten warm, but are even better when served at room temperature.

What Makes Cheddar Orange?
The orange color of cheddar cheese comes from annatto, a vegetable extract derived from achiote seeds . Achiote seeds are red seeds that are often available in Spanish and Latin American markets.
