Sugar snap peas are small vegetables with an edible pod. Packed with nutrients, these peas are plump, firm and smooth when ripe. Sugar snap peas are low in saturated fat, cholesterol and sodium. There are healthy preparation options for sugar snap peas that anyone can make. - Stir-fry three green onions and one clove of chopped garlic with three quarters of a pound of sugar snap peas for four minutes. Toss the mixture with fresh mint leaves and salt to taste. Serve hot.
- Boil a half pound of fresh or frozen sugar snap peas in 1 inch of water with a pinch of salt. Add a teaspoon of sugar and 2 tablespoons of butter. Peas will be tender in seven to eight minutes. Add chopped parsley.
- Microwave 1 pound of fresh or frozen sugar snap peas, one small, sliced onion and 1½ tablespoons of water on high for five to seven minutes. In another bowl, combine 1 teaspoon of cornstarch, 4 teaspoons of sugar, a dash of pepper, 2 tablespoons of vinegar and 1½ tablespoons of water. Place the second mixture in the microwave for 30 to 45 seconds. Combine the two mixtures.
- Boil a half pound of sugar snap peas for one to two minutes and set aside. Crush 1 cup of raspberries and add 2 tablespoons of raspberry vinegar. Add 2 tablespoons of olive oil and a pinch each of sugar, salt and pepper. Toss all the ingredients and let cool for 30 minutes. Drizzle the cold mixture over lettuce.
- Boil 2 pounds of fresh sugar snap peas until crisp and set aside. Let the peas chill for eight hours. Sauté the peas in butter with two cloves of garlic, 1 tablespoon of fresh lemon juice, 2 teaspoons of grated lemon rind and a half teaspoon of freshly ground pepper. Add a dash of ground pepper to top it off. Sauté ingredients for two minutes and serve.
