- Carbohydrates are sugars and starches that provide energy for humans. Zucchini is a quality carbohydrate, like many other vegetables, that is low in calories and loaded with fiber and nutrients. A 1/2 cup serving of cooked zucchini contains 3 g of carbohydrates.
- Zucchini contains complex carbohydrates and dietary fiber, both essential for good health and digestion. Complex carbohydrates control blood glucose levels. Zucchini is low in sodium, saturated fat and cholesterol. Zucchini---especially its dark skin---is also a good source of vitamin A, thiamin, niacin, phosphorus, vitamin B6 and other minerals.
- Zucchini is a three net carb vegetable, along with yellow-skinned summer squash, pumpkin and cauliflower. Winter squash, like acorn and butternut squash, are eight to 10 net carb vegetables. You can calculate the net carb value of a food by subtracting fiber grams from the total carb grams.
- The method of preparation affects the carbohydrate content of zucchini. Steamed or raw zucchini is the lowest in carbs. Combined with other foods, like cheese and grains, the carbohydrate content increases. One slice of zucchini bread can have as many as 30 g of carbohydrates.
- A large portion of the calories in zucchini comes from sugar, which you should consider in nutritional planning. Darker green-skinned zucchini have higher levels of nutrients; wash, but do not peel, zucchini for maximum nutritional value.
