- 1). Place one stick of butter into a medium saucepan on your stove top. Set the stove to "low" and heat the butter just until it melts.
- 2). Transfer the melted butter into a large bowl, along with, 1 1/2 tsp. of salt, 1/2 tsp. to 1 tsp. of cayenne pepper and 2 to 4 tbsp. of hot sauce--the pepper and hot sauce amounts depend on how spicy you want the wings. Add 3 to 4 lbs. of chicken wings or drumettes into the bowl with the hot sauce mixture.
- 3). Toss the chicken with the hot sauce mixture until all the wings are evenly coated. Set your oven to 425 degrees Fahrenheit.
- 4). Arrange the coated chicken wings onto two baking sheets, making sure they are in a thin, even layer.
Place the baking sheets into the oven and bake for about 30 minutes or until the chicken wings are golden brown. - 5). Insert an instant-read meat thermometer into the thickest area of the meat on a chicken wing and ensure it reads 160 degrees Fahrenheit; if not, add the wings back into the oven for another five minutes or so. Serve the Buffalo wings immediately with blue cheese dressing and celery sticks.
