- 1). Cut the leftover baked potatoes into bite size pieces. You can remove the skin if you prefer. I like the added flavor of leaving the skins on the baked potatoes.
- 2). Dice the onion. The amount of onion you included is a personal preference.
- 3). Place a small amount of butter in a skillet (I used 1-2 T but it depends on how many potatoes you use). Heat the butter over medium heat until it is melted.
- 4). Place the leftover baked potato pieces and the onion in the skillet. Add bacon pieces. Season with salt and pepper.
- 5). Saute the potato mixture for 5-10 minutes. The baked potato pieces are already cooked so it's a matter of heating them. The longer you saute the potatoes, the crispier they will get. I prefer them crispy on the outside so I cook mine longer. Keep an eye on the potatoes and remove them from the heat once they reach your desired crispiness.
