- 1). Heat griddle over medium-high heat. Combine flour, baking powder, salt and sugar into a medium bowl. Mix dry ingredients with a fork or spoon.
- 2). Add the vanilla extract and the oil.
- 3). Add the water to the batter until the batter is the right consistency. Add 1 1/2 cups first and then gradually add a little more at a time. Make sure the batter is not too thin or too thick.
- 4). Add in fruit you and your kids like. Stir gently.
- 5). Spoon the batter onto a heated griddle. When batter begins to bubble, flip pancakes carefully. Remove from griddle when pancakes are golden.
