Green Smoothies Add spinach, kale or celery to your fruit smoothies.
I know it doesn't sound great but if you put enough sweet fruit like bananas, mangos, peaches or berries you don't even taste the greens.
Feel free to use frozen fruit works great.
Halloween coming up get your kids to drink up by telling them it's goblin juice.
Basic Green smoothie recipe Add to blender: -2 c.
cold water or orange juice (fresh squeezed if possible) -1-2 ripe bananas** -1 fruit of choice (mango, peeled orange, peach, or several berries) handful of washed, torn greens* Blend until thoroughly smooth.
Enjoy! *Spinach is great to start with, but kale, collards, dandelion greens are extremely high in nutrients.
**If you chop and freeze your bananas first, it will give your smoothie more of a milkshake consistency Make your tomato sauce even better- Roast an eggplant, puree it and add to your home made or even jarred tomato sauce.
Tastes great and if you don't tell anyone they won't know it's in there.
Add zing to your Mayo Steam and puree cauliflower and combine with your mayonnaise.
It makes for great chicken, tuna or egg salad.
Veg out your Meatloaf Add cup each of pureed carrot, and cauliflower puree to your regular recipe.

Zucchini Blondies 2 1/2 c.
grated zucchini (I used my box grater with the biggest holes and then spread my zucchini on 2 layers of paper towels, covered them with two more layers of paper towels which I weighted down with some cans of tomatoes and put in the fridge) 2 ripe bananas, mashed smooth 1 c.
coconut oil 1 tsp.
pure vanilla extract 2 tbsp.
rum (optional) 1/2 c.
sugar 1/2 c.
maple syrup 3 c.
whole wheat pastry flour 1 tsp.
sea salt 1 tsp.
baking soda 1 tsp.
cinnamon 1 c.
semi-sweet chocolate chips 1 c.
chopped almonds (or the nut of your choice) Preheat your oven to 350F Combine the zucchini, bananas, coconut oil, sugar, maple syrup, vanilla, and rum together until well blended.
In another bowl mix together the flour, salt, baking soda, and vanilla.
Add the flour mixture to the wet mixture and combine until all the dry ingredients are incorporated.
Stir in the almonds and chocolate chips.
Spread in a greased 11 x 17 inch pan and spread the blondie batter in the pan.
Bake for 40 minutes.
Check for doneness by sticking a knife of toothpick in the center.
If it comes out clean it is done.
Cool completely (if you can stand it) and cut into squares.
I like to store them in the fridge and eat them cold.
