Kir and Kir Royale Cocktail Recipe
Kir Royale, named after Burgundian mayor Felix Kir who developed the cocktail as a means of infusing the region's surplus of white wine with black fruit liqeur, as most of the reds had been confiscated during WWII, is a dark berry-flavored cocktail made with the blackcurrant liquor of creme de cassis and Champagne. Kir Royale is often served as an apéritif in a fluted sparkling wine glass. When made with a still white wine instead of Champagne, this cocktail is simply called Kir.
