1You will not find conch at the corner store or supermarket, unless you live in an ethnic community. I usually purchase conch at a fish market. Use about a pound of conch for this salad.

Rinse and dice 1lb of conch into small pieces and place in a bowl. Take your time cutting the conch, as it is kind of rubbery like clams. Use a sharp knife.

Dice green pepper, celery, tomato, onions in small pieces, a little smaller than the conch.

Thoroughly mix the conch, green pepper, celery, tomato, and onions together.

Take the juice of 2 fresh lemons and pour over the conch salad. Add crushed pepper, salt and pepper to taste.

For the best flavor, allow the conch salad to sit a few hours to overnight in the fridge.
