Bison is a low fat, high protein meat loaded with iron, essential fatty acids and vitamin B12.
In fact, it has a higher amount of these nutrients than beef.
You can cook it similar to beef, but since it is a lean meat there are a few things to remember.
o Don't overcook.
Cook quickly at a high heat to sear in its wonderful flavor and juices.
o For frying just add a dab of olive oil or other healthy fat.
o For steaks that are 1" or more, baste with a little olive oil for about 2 hours.
Set the grill at medium-high to high heat.
Grill for 4 minutes on each side for medium-rare doneness.
If the steaks are thin, it's better to use a high heat and short cooking time.
o For a 3lb roast, sear it by quickly frying the outside.
This seals in the moisture and that sweet bison flavor.
Preheat the oven to 475° and put the roast in for 10-15 minutes.
Then reduce the heat to 320°.
Leave the roast in for 20-35 minutes.
Check for how rare you want the meat, but don't overcook.
o Burgers-For grilling, no additional fat or oil is needed, just pure bison.
Set your grill for medium-high heat and grill the burgers for about 3 minutes on each side.
This is for a medium to medium-rare burger.
Rare bison burgers are safe to eat as long as no beef or pork fat is added in.
Since bison is low in fat and high in protein it is nutrient dense, so you eat less and feel fuller.
It is part of a healthy diet for those with heart issues and diabetes.
It is also easily digested for those who have trouble with beef.
Bison is free of hormones, antibiotics and drugs.
