Okay now that our pork has that paste on top that we made wit the rum and the brown sugar and all the other little bits, we are going to take this out. It's been cooking for about another 10 minutes. Just going to bring it up to 160 degrees as you saw before it was about 140 and it is about perfect. So we are going to go ahead and take this out. You are going to see how brown that is now. Put this up here and what we want to do is go ahead and take this out and just go ahead and put it on a plate. See how beautiful and brown that is. Just put that on a plate and let that rest for about 10 minutes or so and we are going to make a really nice sauce for it so you will see what is going to come up next.
