You will need Olive oil (1 tablespoon) Onion (1) Garlic (6 teaspoons, minced) Shrimp (1 pound, peeled and deveined) Pastry shells puff (12 and previously baked) Butter or margarine (4 tablespoons) Cream cheese (3 packages or 8 ounces, previously softened) Eggs (4) Heavy cream (1/2 cup) Smoked Gouda (16 ounces previously grated) Salt (2 teaspoons) How to do it: Above all you will need to preheat the oven first, you have to do it at 350ºF or 175ºC degrees, leave it heating while you do the mix; for this you will need a large skillet over medium to low heat, here you will warm the oil and saute the onions and garlic until the onions turn translucent; when this is done set them aside to cool while you do the rest.
Now cut the shrimp into half inch pieces, but reserve 12 uncut for garnish.
After this take a large skillet place it at medium-low heat and in here melt the butter adding the rest of the garlic and all the shrimp, cook this mix for 2 to 4 minutes or until the shrimp turn opaque and pink.
Now you have to work on the pastry.
Remove the inside of the cooled puff pastry shells.
Before you finish mix in a large the cheese, beat the cream cheese until creamy, adding one egg at a time and keep mixing until it has an uniform look; add the cream, gouda, onions, shrimps and salt.
Use this mix to fill the pastry shells.
Now take the shells and bake them in the preheated oven for 20 to 25 minutes o until the top is golden brown, garnish them with the whole shrimp and the chopped chives, this will give it a more elegant look and will be ready to be eaten.
