Salsas can add an exotic touch to a rather boring dish.
One of my favourite easy to cook salsas that can be used as a marinate is roasted sweet pepper.
It goes great on any steak or fish.
All you need are two red peppers, one green pepper and one yellow one for extra colour.
Then 1/4th cup of virgin olive oil and 1 tablespoon of balsamic.
Two table spoons of capers and 1 tablespoon of chopped Italian parsley with 1 large garlic clove minced.
Heat up a grill on med-high and put the peppers on an aluminium foil.
It helps to rub a little bit of oil on the grid, makes them cook faster and more uniform.
Let the peppers char everywhere it should take about 20 minutes in total.
Turn them on a new different side every 5 minutes.
Once they are all charred, throw them in a paper bag, close the bag and leave it alone for 10 minutes.
They will steam and it will make the skin very easy to peel.
Then in a small bowl, mix the olive oil with the balsamic vinegar.
Put in the capers, the garlic, the pepper, the salt and the parsley.
Stir it very well and pour this all over the roasted peppers.
Put it in the fridge for an hour to let the flavours blend in completely.
You can serve this with any type of meat, even burgers or grilled fish.
Although it is quite high fat, it is also a very tasty salsa!
