Corn - Inexpensive, Overlooked But Extremely Delicious and Nutritious

It's often overlooked as a side dish for dinner; it's absolutely necessary at any true American BBQ and it's packed with vitamins and nutrients that most people don't know about.
Yes, I'm talking about corn.
After doing a little research, I was shocked to find that corn is not only a delicious, inexpensive side dish, but it is packed with nutritional value.
Here is a list of some of the nutrients one can get from eating these yellow kernels: FIBER: Contains a large amount of your needed daily amount of fiber.
The benefits of fiber are numerous.
First and most important is the need for fiber to regulate our bowel movements.
One never really thinks about having regular bowel movements until you've dealt with people who haven't had one for a week or so.
Let me tell you from personal experience, it's terrible.
Drink plenty of water and don't forget the fiber.
Fiber is also linked with lowering cholesterol levels and helping to reduce the risk of colon cancer.
VITAMIN B1: Which is used in the metabolism of carbohydrates.
Personally, carbohydrates are the one food group that I always have trouble with when it comes to weight.
I really just try to avoid the carbohydrates but knowing that corn can help in digestion is encouraging to put it in my diet.
FOLATE: Also known as Folic Acid.
This nutrient helps with the generation of new cells that care especially important before and during pregnancy.
Although extremely necessary for pregnancy, folate is also very important in daily life.
VITAMIN C: This vitamin is needed on a daily to fight against bacteria and infections that are constantly attacking our bodies.
It certainly won't hurt anyone to have a little bit of help from vitamin C.
I try to take supplemental vitamin C, but will take more from wherever I can get it.
So, after reading about just a few of the benefits of this precious vegetable, I will certainly give more credit where credit is due.
So I encourage you to also put corn in your recipes from corn on the cob to honey corn bread!
