    Mini Pizza Rounds

    • Cut a whole-wheat English muffin in half. Let the child top one half with a tablespoon of pizza/spaghetti sauce. Then let them add toppings of their choice. Some healthy options might included chopped tomato, green pepper, sliced mushrooms, cubed ham and low-fat mozzarella cheese. Place in a 350-degree oven for 10 minutes. If an adult is not available to help, these can easily be heated in the microwave for about 30 seconds.

    Fruit Kabobs With Dipping Sauce

    • Have an adult cut a banana, apple, strawberries and grapes into 1/4-inch pieces. The child can then thread the fruit on kabob sticks (carefully, and under supervision). Spread 1/2 cup of coconut or chopped nuts on a plate. Have the child coat each kabob until sides are covered with coconut or chopped nuts. Spoon a container of any fruit-flavored yogurt into a bowl. Add remaining coconut or nuts from the coating into the yogurt and stir. Dip kabobs into fruit sauce.

    Peanut Butter Pizza

    • Let the child spread two graham crackers with a thin layer of peanut butter. Then add a thin layer of strawberry jelly to resemble "sauce." Sprinkle a small amount of coconut over the jelly. Slice several strawberries and lay on the coconut layer. Have child experiment with other ingredients that resemble other foods, such as sliced grapes or raisins to resemble olives.

    Ham Roll Ups

    • Have child stack slices of American cheese and deli ham on a flat flour tortilla. Microwave for 30 seconds. Add shredded lettuce and sliced tomatoes. Roll into a log. Cut log into 1/2-inch slices and serve with ranch dressing as a dipping sauce.

    Frozen Banana Pops

    • Once an adult has cut 2 bananas in half, have the child place a craft or popsicle stick 3/4 of the way through the banana (lengthwise). Freeze for 2-3 hours. Place 1/2 cup of peanut butter in a bowl and microwave for 1 minute. An adult will need to remove the peanut butter from the microwave as it will be extremely hot. Take the bananas out of the freezer and dip into the hot peanut butter. Use a spoon if necessary to completely coat the banana. Now dip the banana in toppings such as coconut, chopped peanuts, miniature chocolate chips, mini candies or crushed cookies. Eat immediately.
