Vegetable Stir-Fry With Beans

This is a great little recipe for a vegetable stir fry with beans, which takes hardly any time to prepare and cook, is very healthy, and tastes great.
So, next time you are wondering what to cook for dinner, consider doing this easy meal.
This recipe serves about three people.
To serve more or less people, just increase or decrease any of the ingredients.
What You Will Need
  • One carrot
  • One bag of bean sprouts
  • One courgette
  • Two tins of beans in water (for example, red kidney beans)
  • Jar of pasta sauce
How to Cook
  1. Open the bag of bean sprouts.
    Tip into a sieve and rinse with water.
  2. Wash the carrot and courgette, and then chop into thin slices.
    I personally like to use the slicing side of a cheese grater as this cuts them into very thin slices.
  3. Heat up a large frying pan with plenty of extra virgin olive oil, and tip in all the vegetables.
  4. Empty both tins of beans into the sieve and rinse thoroughly.
    Keep stirring the vegetables in the frying pan.
  5. Tip the beans into a saucepan, mix in the jar of pasta sauce, and heat up.
  6. Continue to stir both the beans and the vegetables for a few minutes until they are ready.
  7. Serve and enjoy!
The great thing about this meal is how easy it is to cook, but also how great it tastes.
It is also a very healthy meal and ideal for vegetarians and vegans as it contains no animal produce at all.
