What You Will Need
- One carrot
- One bag of bean sprouts
- One courgette
- Two tins of beans in water (for example, red kidney beans)
- Jar of pasta sauce
- Open the bag of bean sprouts.
Tip into a sieve and rinse with water. - Wash the carrot and courgette, and then chop into thin slices.
I personally like to use the slicing side of a cheese grater as this cuts them into very thin slices. - Heat up a large frying pan with plenty of extra virgin olive oil, and tip in all the vegetables.
- Empty both tins of beans into the sieve and rinse thoroughly.
Keep stirring the vegetables in the frying pan. - Tip the beans into a saucepan, mix in the jar of pasta sauce, and heat up.
- Continue to stir both the beans and the vegetables for a few minutes until they are ready.
- Serve and enjoy!
It is also a very healthy meal and ideal for vegetarians and vegans as it contains no animal produce at all.
