Hi! My name is Eddie Leal, I¡¯m the Brew Master here at Steelhead Brewing Company, and we¡¯ll be talking about the first step of the brewing process. Once we¡¯ve determined what kind of beer we¡¯re going to brew, we start with the mill. Once we know what kind of beer we¡¯re brewing, we get the grain that we¡¯re going to use and mill it. The bulk majority of the grain that we use in every batch is pale malt, and basically we have a storage silo outside that hold 20 thousand pounds of pale malt. What I do is I bring that in, I auger it in into the mill through our auger. This here is our jump scale, that we do basically 15 pound increments is what we bring in. Along with the pale malt that we mill here, we add the specialty malts also for that particular beer style. Basically, when we mill the grain, all we want to do is crack it in half; we don¡¯t want to powderize it. The part down below is our mill. What it is, is it¡¯s a roller mill, so basically we¡¯ve got 2 rollers that are rolling and the grain falls in between 2 rollers, and that¡¯s what cracks it in half. Basically, you want to adjust it to where it¡¯s able to crack it in half. Remember that¡¯s important, we don¡¯t want to powderize it and we want to make sure that we mill it enough also to where you can get the sugars out of the grain, so that¡¯s very important.
