- 1). Remove the outer leaves of the lemongrass, and wash thoroughly.
- 2). Trim the bulb and green top off the lemongrass with a chef's knife.
- 3). Score the stalk with a fork. Place the stalk on the cutting board, and use the flat side of the knife and the heel of your hand to crush the stalk.
- 4). Cut the stalk into 2-inch segments. Add the lemongrass to soups, stews and other dishes, or steep the pieces in hot water to make tea.
