- 1). Choose at least one day every week when you will make a meatless meal. One non-profit advocates "Meatless Mondays," but you can choose whatever day works best for you. Save even more money by making meatless meals multiple times per week.
- 2). Purchase dry beans, which are much less expensive than canned beans, to use as part of your meatless meals. Soak the beans in water for about six hours before cooking them. Meal ideas include vegetarian chili, bean soup or a salad topped with garbanzo beans and kidney beans.
- 3). Make a cheese lasagna. The cheese in the lasagna provides plenty of protein and you will save money by not including meat in it.
- 4). Make pizza without meat toppings. Purchase a frozen crust, top it with tomato sauce, sprinkle lots of cheese over that and add your favorite vegetables. Mushrooms, spinach, bell peppers, onions, artichoke hearts and herbs all taste great on pizza, and they are healthier and less expensive than pepperoni and sausage.
- 5). Substitute tofu for meat in stir-fry dishes. A dish with just vegetables and rice or noodles might not seem filling enough, but adding tofu helps round it out. Although tofu is not exactly cheap, it is less expensive than the beef often used in stir-fry dishes.
